We often think of citrus when it comes to vitamin C, but peppers, parsley and kale contain even higher concentrations of this immune-supporting nutrient. This recipe combines them all with blood oranges, mixed grains, almonds and feta in this nourishing warm salad bowl.

Ingredients

250g cooked grain of choice (brown rice, quinoa)

1 blood orange

1 tbsp dijon mustard

1 tbsp red wine vinegar

Olive oil

1 red pepper, sliced

Large handful of kale, chopped

40g almonds

50g feta or soft goats cheese, crumbled

Small handful parsley

Method

  1. Cook your chosen grain. Segment the orange, squeeze any juice into a small bowl and add the mustard, red wine vinegar and enough olive oil to whisk into a dressing.

  2. In a pan, heat 1 tbsp of olive oil over a medium heat. Add the red pepper and saute for 3-4 minutes until softened. Add the kale and cook for another 2-3 minutes until wilted. Season with salt and pepper.

  3. Meanwhile, in a dry pan, toast the almonds for 2-3 minutes until fragrant. Remove from the pan and roughly chop.

  4. To a large mixing bowl, add the grain, kale and pepper, orange segments, almonds, feta and parsley. Pour in the dressing and mix well. Divide between two bowls and serve.
